I did a little shop update today, including these two rather Norwegian-looking dolls, Astrid and Tim. And then we decided it had been too long since we made pikelets. They really remind me of past 'bring a plate' occasions of my Kiwi childhood such as school dances and end of year concerts. But they're so good. And easy and quick to make. Even with small hands helping to whisk, measure, and flip.
Pikelets
1 cup plain flour
1 tsp baking powder
1/4 tsp salt
1 free-range egg
1/4 cup sugar
3/4 cup milk
Sift flour, baking powder and salt into a bowl. In another bowl beat/whisk egg and sugar until thick. Add with milk to the sifted ingredients. Mix until just combined and smooth. Heat up a little butter in a frying pan and drop tablespoonsful of the mixture from the point of the spoon, like tiny pancakes. When each pikelet begins to bubble, turn it over and cook for a minute or so. Eat warm or cold, plain or with butter/jam/cream...
